Banana Yoghurt & Passionfruit Muffins

I'm back from a lovely day of teaching embroidery to the Bodalla Embroidery ladies and these are the remainder of the muffins I took to share for morning tea - delicious and easy! Here is the recipe -
125g butter, 1 cup castor sugar, 1 egg, 3/4 cup mashed banana, 200g passionfruit yoghurt, 2 cups wholemeal flour, 1/4 cup shredded coconut.
Grease about 30 miniature muffin tins (or 12 large). Cream the butter and castor sugar in a small bowl with an electric mixer until light and fluffy, then add the egg. Beat until combined. Transfer the mix to a large bowl and stir in banana, yoghurt, sifted flour and coconut.
Place spoonfuls of mix into the muffin tins and bake in a moderate oven for about 15 minutes or until slightly browned on top. Leave in tins for 10 minutes to cool and then remove and ice with Passionfruit Icing.
Passionfruit Icing - Mix 1 1/2 cups icing sugar and 1 teaspoon butter and 1 dessert spoon of cream cheese, together with the pulp of 2 passionfruit. Mix well and ice inidividual muffins.
If you prefer, leave the icing and dust with icing sugar before eating! Yum!
